Background

Teresa Eury is a Registered Dietitian Nutritionist, licensed in the state of Florida, providing evidence-based Medical Nutrition Therapy for individuals navigating chronic conditions, digestive disorders, and complex medical needs.

 

Her background includes advanced medical nutrition therapy, enteral and parenteral nutrition support, and collaboration with physicians and multidisciplinary healthcare teams. She has supported patients through hospital stays, recovery periods, and long-term nutrition challenges — bringing that same clinical precision and structured thinking into private practice.

But expertise alone isn’t enough.

 

As both a clinician and a mother, Teresa understands how overwhelming it can feel to manage your health while balancing the demands of everyday life. Her mission is to make nutrition less complicated and more compassionate — so clients can feel better, function better, and still enjoy the foods they love.

​

She holds a Bachelor of Science in Nutrition and Dietetics with a minor in Psychology from Indiana University of Pennsylvania, and a Master of Public Health from the University of Pittsburgh. Teresa also earned a Certificate in Minority Health and Health Disparities and completed her Dietetic Internship through the University of Northern Colorado.

She currently serves as a clinical dietitian within a hospital setting while leading her private practice, Sunshine RD LLC. Her experience spans acute care, outpatient services, community health, and education, supporting patients and clients through illness, recovery, prevention, and long-term management.

​

Through Sunshine RD LLC, Teresa offers private, personalized Medical Nutrition Therapy designed to meet clients where they are — whether managing diabetes, navigating gastrointestinal symptoms, addressing weight changes, or supporting a loved one receiving tube feeding. Private practice allows for meaningful time, individualized planning, collaboration with healthcare providers when needed, and flexible virtual or in-home support.

 

Teresa has taught nutrition from preschool to the collegiate level and is the author of Silly Acts and the Attack Against My Nutrient Grabber: Gabrael’s Diagnosis with Celiac Disease, a children’s book designed to help families navigate celiac disease with clarity and hope. She is also a proud partner with SHE Strong Initiative with Vero Beach Moms Non-Profit.

More than credentials alone, Teresa brings lived experience. As a mother of two energetic boys, she approaches nutrition with realism, empathy, and practical structure — meeting clients where they are while guiding them toward sustainable progress.
